Hello everyone! I’m sorry I took a little bit of a hiatus. With everything going on from the holidays to work and everything in between I’ve been relatively busy, but I’m back and my first post back is a sweet guilt free treat: chocolate zucchini muffins. Don’t let the zucchini part freak you out, I made these for Christmas without telling the family what they were and they couldn’t stop raving about how delicious they were, and how they were mad at me because they couldn’t stop eating them and they thought they were gonna gain all this weight. Their minds were blown when I told they were healthy and that there was zucchini in them, but they were also a bit relieved and helped themselves to even more 🙂 Oh and before I forget to mention it these are also gluten free! I know a lot of gluten free people have a heard time finding tasty treats, so here is one for ya’ll as well!

Anyways, I’ll stop hyping them up and give you the recipe so you can try them for yourself!

*Preheat the oven to 375 degrees*


  • 1/4 cup apple sauce
  • 2/3 cup greek yogurt
  • 1 tsp vanilla
  • 1 cup coconut flour
  • 1/2 cup cocoa
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 1/2 cups grated zucchini
  • 3/4 cup dark chocolate chips
  • 1/3 cup almond milk


  1. Stir together the apple sauce, greek yogurt, and vanilla in a large bowl. (the “wet” bowl)
  2. in a medium bowl mix the coconut flour, cocoa, baking powder, baking soda, salt, and sugar. (the “dry” bowl)
  3. After each bowl is well blended add the contents from the dry bowl to the wet bowl and mix them well together.
  4. Next you will stir in the grated zucchini and the dark chocolate chips.
  5. after this step the contents may seem a little dry and that’s when you’ll add in the almond milk.
  6. You’ll scoop the mixture into a muffin tin, I’d say fill each muffin cup about 1/2-3/4 of the way.
  7. Once the muffin tin is full, you’ll stick it in the heated oven for about 22 minutes.
  8. Let them cool off, and enjoy your guilt free sweet treat!
