For those of you who know me, you know that I LOVE sweets, and fighting my sweet tooth was the most challenging thing for me to do. You also know that I LOVE to bake. With the Thanksgiving and Christmas right around the corner, I know that these holiday’s are the ones where the baking sheets and sugar comes out. For those of you who are trying to lose weight or are diabetic or just want to do better but also want to give in to your sweet tooth without feeling guilty, I’m starting this new segment titled “The Season of Baking” where I’ll be experimenting with healthy alternatives, and I’ll be posting my favorites!

To start off this sweet season I’m sharing a recipe for a healthy banana bread. What makes this bread so healthy is that there’s no added sugar, no butter, and no oils. All of the bad stuff is taken out, but trust me you would never know! I had my family try it before telling them what I did, and they were shocked.

The recipe is:

  • 2-3 ripe bananas
  • 1/2 cup greek yogurt
  • 2 eggs
  • 1/4 cup honey
  • 1/2 cup oats
  • 1 1/2 cups flour (I used all purpose flour, but to make it healthier use an almond or coconut flour)
  • 1/2 – 1 tsp cinnamon
  • 1 1/2 tsp baking soda
  • 1 – 1 1/2 tsp vanilla
  • 1/2 cup almond milk
  • a pinch of salt

Directions:

  • preheat oven to 350 degrees.
  • mix the flour, salt, cinnamon, baking soda, and oats in a bowl
  • in a separate bowl mash the bananas and mix in the greek yogurt and honey
  • in small bowl mix the eggs and almond milk
  • after the eggs and milk are well mixed add that mixture to the bowl with the bananas and mix that up well.
  • while stirring slowly add the dry mixture of flour, salt, cinnamon, etc.
  • after that is well blended together pour in an oven safe bread pan
  • put it in the oven for 35-40 minutes
  • and enjoy!

Feel free to experiment and add your own things, for example next time I may add some walnuts, or maybe some dark chocolate chips. If you want to make it vegan then take away the eggs and use applesauce instead. There are so many different things you can try, and please feel free to share them with me!
